Cauliflower Soup (yes, really!)
The rain is upon us here in the Seattle area, and to me, that means it's time to get my soup on!
This is one of my favorite recipes that I go back to time and again. It's super easy, requires just a few ingredients, and tastes a-mazing. I discovered this recipe in the Primal Cravings cookbook - I left out the butter that they recommend topping the soup with, as we try to keep it dairy free over here.
Ingredients
1 large head of cauliflower
3 garlic cloves, crushed
1 quart chicken stock
1 tablespoon lemon juice
Salt to taste
Toppings
Crispy bacon
Chopped green onions
Chop the cauliflower into medium sized pieces.
Add cauliflower, garlic, chicken stock, and lemon juice to a large pot. Bring to a boil, then turn down to simmer. I usually put a lid on it while it's simmering. Continue to cook until the cauliflower is tender.
While the soup (which looks more like stew at this point) is simmering, cook the bacon. I use a countertop frying pan at 375 degrees. Cook until crispy. When it's cooled, chop into bite sized pieces. Chop the green onions while the bacon is cooking.
When the cauliflower is fork tender, transfer to a blender and blend until smooth.
Spoon soup into a bowl and top with green onions and bacon. Enjoy!
